Di-ammonium phosphate (aka DAP) is the most common yeast nutrient used in winemaking. Its primary action is to add nitrogen to the must, which helps the yeast synthesize strong cell walls and stimulate growth. Add at the beginning of fermentation. Also used when making yeast starters, or restarting stuck fermentations.
Usage: 1 tsp. per 5 gallons
