Campden Tablets, also known as sodium metabisulfite in tablet form, are used primarily in wine, cider, and beer making to prevent the growth of certain bacteria and to inhibit the growth of wild yeast, without affecting the flavor of the wine or wort . General useage is one crushed tablet per gallon of must or wort. (provides approximately 65 ppm)
They can also be used to eliminate chlorine (or chloramine) from many different water sources. In this case, one Campden tablet can treat 20 gallons of water.
Campden tablets can halt the ferment before all the available sugars are converted by the yeast when used towards the end of the fermentation process. Thus, controlling the amount of sweetness in the final product.
