Unmalted wheat is primarily used in producing Belgian ales, usually Wits and Lambics. In addition, it is the best grain for improving head retention in any beer. By adding as little as 1/4 lb to any grain bill, the head retention will be enhanced with no flavor or color impact. If used in mashing, a protein rest is recommended.
