Peated malt is barley that has been smoked over burning peat to impart a robust smokey flavor in beer that is commonly found in Scotch Ales. The aromas and flavors of peated malt are characteristic of Islay and Irish whiskeys and should be used sparingly (4oz per 5 gallons) as it will dominate most other malts in flavor. Originally a distillers malt, many brewers are now use it in a variety of smoked porters and Scottish ales, resulting in an extremely atypical tasting beer with a very strong earthy and smokey flavor. Peated malt has a Lovibond of 2.8 and gravity of 1.034.
