What hops make a very bitter beer?

Typically Hops with High AA (Alpha Acid) content make for a more bitter beer. there is also when you add them. a high alpha hop added in the last 5 min Imparts a lot less bitterness than the same hop added @ 60 min.
Look for the AA rating on the packet or bag of hops.
